Vanilla Cupcakes with pink icing and rose petals

Ingredients

  • 125g butter
  • 150g sugar
  • 3 large eggs
  • 5ml vanilla essence
  • 280g cake flour
  • 15ml baking powder(3 teaspoons)
  • pinch salt
  • 125 ml milk
  • For the icing
    • 150g butter
    • 1 cup icing sugar
    • pink food colouring
    • rose petals
    • dragees (decorative candy balls)

Method

  1. Preheat the oven to 180’C
  2. Beat sugar and sugar together. Add eggs and beat again until light and creamy
  3. Add vanilla essence.
  4. Sift the flour, baking powder and the salt.
  5. Add milk and dry ingredients to the butter mixture. Mix well.
  6. Fill cupcake holders about 2/3 full and place in a muffin tin.
  7. Bake in a pre-heated oven for 12-15 minutes.
  8. Makes about 24.
  9. For the icing
    1. Beat the butter with the icing sugar together until soft and fluffy.
    2. Add the vanilla essence and a touch of food colouring and mix again.
    3. Add some milk until you get the desired consistency.
    4. Decorate with a fresh rose petal and the little candy balls.
