Vanilla Cupcakes with pink icing and rose petals
Ingredients
- 125g butter
- 150g sugar
- 3 large eggs
- 5ml vanilla essence
- 280g cake flour
- 15ml baking powder(3 teaspoons)
- pinch salt
- 125 ml milk
- For the icing
- 150g butter
- 1 cup icing sugar
- pink food colouring
- rose petals
- dragees (decorative candy balls)
Method
- Preheat the oven to 180’C
- Beat sugar and sugar together. Add eggs and beat again until light and creamy
- Add vanilla essence.
- Sift the flour, baking powder and the salt.
- Add milk and dry ingredients to the butter mixture. Mix well.
- Fill cupcake holders about 2/3 full and place in a muffin tin.
- Bake in a pre-heated oven for 12-15 minutes.
- Makes about 24.
- For the icing
- Beat the butter with the icing sugar together until soft and fluffy.
- Add the vanilla essence and a touch of food colouring and mix again.
- Add some milk until you get the desired consistency.
- Decorate with a fresh rose petal and the little candy balls.
