Tomato and Mozzarella Stack with Basil Cream

Serves 6-8


  • 18 slices tomato
  • 18 slices mozzarella
    • 30g fresh basil
    • 125ml mayonnaise
    • 250ml cream
    • 2.5ml minced chilli
    • coarse salt and black pepper


  1. Process the basil and mayonnaise in a food processor. Add the cream, minced chilli and seasoning. Process just enough to combine.
  2. Make stacks of the tomato and mozzarella on a large platter. Spoon the basil cream around the stack and decorate with a basil leaf.
