Put the sesame seeds in a large cold frying pan [mediuim] over medium heat and stir for 5 minutes or until deep golden. Transfer to a bowl. Add the almonds to the pan and toast for 3 minutes, tossing the pan constantly, or until golden

[change method to roasting 180c 5 mins or until roasted]

Put the almonds, macadamias, cashews and Brazil nuts into a food processor and process until the mixture starts to stick together up the sides. Add the peanut butter, half the sesame seeds and salt, then continue to process until the mixture is thinner and the oils have released from the nuts. Add the remaining ingredients and pulse until just combined. Transfer to a steriised and dry jar. Allow the mixture to cool completely before sealing with a lid to prevent any condensation or moisture in the jar. Enjoy.

Alternatively, you can use store-bought sesame seeds but the flavour and texture is unmatched with freshly toasted seeds.
