Sticky Toffee Pudding

Ingredients:

  • FOR THE CAKE:
    • 1 1/3 Cups flour
    • 1 ½ tsp baking powder
    • 100g Treacle Sugar
    • Pinch of salt
    • ½ cup milk
    • 2 eggs
    • 1tsp Vanilla essence
    • 75ml Melted Butter
  • FOR THE TOFFEE SAUCE
    • 120g soft butter
    • 200g Treacle Sugar
    • 250 cream

Method:

  1. FOR THE CAKE:
    1. In a large bowl, sift the flour and baking powder, add the sugar and salt and combine well
    2. In another bowl, add the milk, eggs, vanilla essence and melted butter
    3. Whisk these together until you get a slight froth on the top
    4. Add the liquid to the dry ingredients and mix well
    5. Pour into a buttered baking dish and bake at 180oC for 40 minutes until the cake is firm to the touch
  2. FOR THE SAUCE:
    1. Add all of the ingredients to a pot and simmer for 5 minutes or so over a medium heat
    2. As soon as the cake comes out of the oven, pour the hot toffee sauce over it, allowing it to soak into the pudding
    3. Serve warm
