Salmon with Pineapple, Lemon & Capers

Ingredients

  • 4 salmon fillets
  • 1 can pineapple chunks
  • 1/2 onion, sliced
  • 1 tablespoon capers
  • 1 tablespoon olive oil
  • lemon, juiced

METHOD

Step 1
Preheat an oven to 190°C (375°F).

Step 2

Place the salmon fillet in a baking dish – top with the pineapple chunks, onions, and capers.

Step 3

Drizzle the olive oil and lemon juice over the salmon.

Step 4

Season with the salt and black pepper.

Step 5

Cover the baking dish with aluminum foil.

Step 6
Bake in the preheated oven until the salmon flakes easily with a fork, about 25 minutes.
