Ribboned Salad with Herb Dressing

Serves 4

Ingredients:

For the Dressing

Method:

  1. Use a vegetable peeler to ribbon the carrots, cucumber and zucchini.
  2. Place the lettuce on a platter, slice the avocado and mound the vegetable ribbons on top.
  3. Drizzle with the dressing.
  4. Shave the parmesan and scatter on top.
  5. Season with salt and pepper.
  6. Serve immediately.

For the Dressing:

  1. Blend all ingredients together. Drizzle over salad just before serving.
