Railway Stew

 

Recipe

Sonja Rautenbach

  • 500 g Boerewors (an award winning (spicy) Boerewors will be great) cut into bite size pieces
  • 60 ml pure Sunflower oil
  • 1 large onion chopped
  • 1 green pepper chopped
  • 3 cloves garlic chopped
  • 2 green chillies chopped or ∏ tsp. dry chilli flakes (Any Brand)
  • 1 tin chopped or whole tomatoes (All Gold or KOO) or 4 large ripe tomatoes peeled and chopped
  • 3 med. Carrots sliced
  • 3 med. Potatoes diced
  • 75 – 80 g frozen peas (Any Brand) or fresh green beans sliced
  • 1 tin Baked beans (All Gold or KOO)
  • 1 tsp. Curry Powder (Any Brand – medium to hot)
  • 1 tsp. BBQ Spice (Any Brand)
  • Pinch Coriander Powder (Any Brand)
  • Pinch Clove Powder (Any Brand)
  • 1 tsp. mixed Herbs (Any Brand)
  • 1 bay leaf (Any Brand)
  • 500 ml Beef Stock (Ina Paarman’s Beef stock powder or concentrated liquid Beef stock)
  • 2 Tbsp. Chutney (Mrs H.S. BALL’S hot chutney)
  • Boiling Water
  • Salt & fresh ground black pepper to taste
  • Fresh Basil & Chutney

Method

  1. Brown wors pieces in oil, remove and set aside.
  2. Fry the chopped onions and green pepper in the oil, scraping the bottom to loosen the brown bits.
  3. Add the chopped garlic and green chilli or dry chilli and fry for a minute.
  4. Add spices and fry a minute.
  5. Add chopped tomatoes, chopped vegies and beef stock
  6. Add herbs and chutney, salt and pepper to taste
  7. Simmer until vegies are almost cooked.
  8. Add browned wors and Baked beans and simmer till vegies are cooked. Add more hot water to thin down if needed.
  9. Turn heat off and stand to mature (the longer, the better)
  10. Re-heat and serve on Krummel Pap.
  11. Garnish with fresh Basil and Chutney on the side

Krummel Pap

Ingredients

  • 700 ml BRAAI PAP (the Brand BRAAI PAP)
  • 750 mL water
  • 1 tsp. salt

 

Method

  1. Bring water to boil in pot. (Nr.2 Black cast iron pot) it will fit on a gas burner.
  2. Stir, add salt and Braai Pap.
  3. Work the Braai Pap into the water with a large metal spoon in a swift motion.
  4. Put lid on and turn heat low.
  5. Stir at regular intervals to loosen the Pap.
  6. When Pap is cooked, turn heat off.
  7. Krummel pap keeps its heat well and can be re-heated on a low heat.
  8. Hot stew also automatically heats the pap when served.
