Quesadillas with Tomato Salsa

This is basically an excellent cheese sandwich with a bit of a kick. This recipe would serve 1 for a main course (I love this for lunch) or it would serve a few people for little bites with drinks before a meal or you could serve this as an accompaniment to the main course.  These are good served with and dipped into, Tomato Salsa, Guacamole (page…), Hot Chilli Sauce, and Red Onion Raita.

  1. Make the tomato salsa.

    • Tomato Salsa
      Mix all the ingredients together, season with salt, pepper and a pinch of sugar
  2. Heat up a frying pan (cast iron, non stick, etc) and place the tortilla on the hot pan (don’t heat it up too much).  Sprinkle the grated cheese over the top keeping it a little from the edge.  Next sprinkle the sliced spring onions and the chilli slices on top and cover with the other tortilla.  The cheese will have started melting at this stage and the tortilla on the bottom should be golden brown, when it is turn it over carefully keeping it all intact, then cook until that side is golden and all the cheese melted. 

  3. Transfer to a board or plate and cut in wedges.  Serve immediately with tomato salsa.

    **NOTE Guacamole is great with this too.

    **NOTE The fastest cheese sandwich so easy, if you have tortillas in the freezer, use them from frozen they are fine.
