Puttanesca Dipping Sauce

Ingredients

  • 1 tablespoon of olive oil (15 ml)
  • 1 shallot, finely chopped
  • 1 clove of garlic, minced
  • 1 tablespoon of tomato paste (15 ml)
  • 2 anchovy fillet, finely chopped
  • 1/4 cup of diced, pitted black olives (60 ml)
  • 1 tablespoon of capers (15 ml)
  • 3 tomatoes, diced
  • A pinch of chili flakes
  • 1/4 cup parsley (60 ml)
  • Zest of 1/2 lemon
  • Salt and pepper

Method

  1. Heat olive oil in a saucepan on medium heat. Add shallot and sautee for 2 minutes. Add garlic, tomato paste, anchovy, olives, capers and fresh tomato.  Sautee for another 5 minutes. Season with salt, pepper and chili flakes.  Add a little water if too thick.  Add parsley and lemon zest.  Serve with the fried calamari.
