Pumpkin Seed Dip

Yield: 2 cups (500 ml)

Ingredients

  • ¾ cup (180 ml) pumpkin seeds, lightly toasted
  • 1 garlic clove, sprout removed
  • ½ cup (125 ml) fresh parmesan, grated
  • 1 cup (250 ml) basil leaves, rinsed and sponged
  • 1 ¾ cups (430 ml) rich yogurt (Mediterranean style)
  • ¼ tsp. (1 ml) honey
  • ¼ tsp. (1 ml) Cayenne pepper
  • Salt and pepper

Method

  1. Use a food processor to chop the pumpkin seeds, garlic, parmesan and basil. Pour into a bowl. Add the yogurt, honey and Cayenne pepper. Season with salt and pepper.
  2. Serve in a small, hollowed-out pumpkin.
  3. This dip is delicious with raw vegetables, grissini (Italian bread sticks) or broiled chicken brochettes.
