Prawn Stir fry with Soba Noodles

 

Ingredients

• 6 green prawns
• 2 tbls olive oil
• Salt
• 4 garlic cloves, crushed
• 1 pkt soba noodles
• 2 tbls olive oil
• 1/2 onion, sliced
• 1 tsp grated ginger
• 2 garlic cloves, crushed
• 1 carrot, julienne
• 1/2 cup shitake mushrooms, soaked and sliced (stem removed)
• snow peas, halved
• 1 red capsicum, quartered
• 2 tsp tamari
• 1/2 tsp sesame oil
• 1 sachet dashi
• 2 tbls coriander leaves
• Garnish with toasted sesame seeds, coriander leaves, sliced spring onions and thin slices of nori.

Method

  1. Peel green prawns, taking out digestive tract but leaving tails on.
  2. Cook prawns in hot wok with oil, garlic and salt. Set aside.
  3. Cook noodles as per manufacturer’s instructions.
    In a hot wok, add oil, onion, ginger and garlic and cook for 30 seconds.
  4. Then add the rest of the vegies and cook for another 30 seconds over a high heat.
  5. Quickly add tamari, sesame oil and dashi granules.
  6. Lastly stir through the noodles, add the prawns back in and the coriander leaves.
    Serve with garnishes.
