Portuguese Bread soup
- 4-5 cloves of garlic, crushed
- 50ml olive oil
- 1bunch of coriander
- 4-5 slices per person of day old bread
- Salt to taste
- 1litre water from boiling the cod fish
- An egg per person
- Place crushed garlic, olive oil coriander in a soup tureen
- Mix into a pulp. Add the bread slices to the tureen.
- Bring water to the boil and poach the eggs and pour over the bread cover with a lid and serve.
