Plum and almond clafoutis recipe
Serves: 6

Ingredients
- Spray oil
- 10 purple plums, halved and stoned
- 4 tbsp Amaretto liqueur
- 1 tbsp brown sugar
For the batter
- 50g ground almonds
- 2 tbsp rice flour
- 80g fruit sugar
- 3 free range eggs
- 2 free range egg yolks
- 250ml semi skimmed milk
For the top
- 25g flaked almond
METHOD
- Preheat the oven to 190°C/gas mark 5. Spritz the base of a 23cm flan dish with an oil spray. Place the plums, Amaretto and sugar in the bottom of the dish and mix together.
- Whizz all the batter ingredients in a blender until smooth and pour it over the fruit. Scatter the top with the flaked almonds and bake for 20-25 minutes until risen and golden brown. Serve warm.
