Plum and almond clafoutis recipe

  • Spray oil
  • 10 purple plums, halved and stoned
  • 4 tbsp Amaretto liqueur
  • 1 tbsp brown sugar

For the batter

  • 50g ground almonds
  • 2 tbsp rice flour
  • 80g fruit sugar
  • 3 free range eggs
  • 2 free range egg yolks
  • 250ml semi skimmed milk

For the top

  • 25g flaked almond


  1. Preheat the oven to 190°C/gas mark 5. Spritz the base of a 23cm flan dish with an oil spray. Place the plums, Amaretto and sugar in the bottom of the dish and mix together.
  2. Whizz all the batter ingredients in a blender until smooth and pour it over the fruit. Scatter the top with the flaked almonds and bake for 20-25 minutes until risen and golden brown. Serve warm.
