Serves 4 – 6
- 1 pineapple, sliced into wedges with the leave intact
- ½ tsp mild curry
- 5 tbsp caster sugar
- 5 – 6 small bunches of red grapes
- 3 tbsp sherry
- 2 tsp sugar
- A few sprigs of mint
- Preheat the bbq.
- Combine the curry and sugar in a bowl and sprinkle of the pineapple.
- Drizzle the grape with the sherry.
- Place the fruit on the BBQ. Caramelise / grill for about 3 – 4 minutes. Allow to cool slightly.
- Serve with coconut or vanilla ice cream.
