Peanut and Spicy Orange Sauces

Ingredients

  • For the peanut sauce:
  • 1/2 cup veal stock (125 ml)
  • 1/4 cup  smooth peanut butter (60 ml)
  • 1 tablespoon soy sauce (15 ml)
  • 1 tablespoon rice wine vinegar (15 ml)
  • 1 tablespoon honey (15 ml)
  • 1/2 teaspoon toasted sesame oil (2 ml)
  • Salt and pepper
  • For the spicy orange sauce:
  • 1/4 cup Mirin (60 ml)
  • 2 tablespoons rice vinegar (30 ml)
  • 1 teaspoon fish sauce (5 ml)
  • ½ teaspoon chili flakes (2 ml)
  • 1/2 teaspoon Sriracha (2 ml)
  • Zest of 1 orange
  • Juice of 2 oranges
  • 1 tablespoon grated ginger (15 ml)
  • 1 tablespoon honey (15 ml)
  • 1 small garlic clove, minced
  • 1 teaspoon corn starch diluted in a little water (5 ml)

Method

  1. For the peanut sauce: In a small saucepan on medium heat, mix all the ingredients.  Stir and cook for about 5 minutes until reduced to a creamy sauce.  Set aside.
  2. For the spicy orange sauce: In a small saucepan, whisk all the ingredients and bring to a boil.  Let simmer for about 1 minute until it thickens.  Set aside.
  3. For serving: Serve with dumplings, egg rolls or spring rolls.
