Pasta with Fresh Tomatoes and Basil

Serves-4

Ingredients

  • 250g fettucine cooked “al dente”
  • ¼ cup olive oil
  • 1 tsp minced garlic
  • 200g rosa tomatoes
  • 3 tbs shredded basil
  • 1/3 cup yellow rosa tomatoes, chopped
  • ½ -3/4 cup grated parmesan
  • coarse salt and black pepper

Method

  1. Mix the olive oil,  garlic, tomatoes, basil and parmesan together in  a bowl.
  2. Season with salt and pepper.
  3. Cook the pasta until “al dente”. Then toss with the sauce.
  4. Sprinkle with more parmesan and more basil if needed.
