Kids Party Food – Sago Fruit Cups

Ingredients

• 1 cup sago
• 2 cups Almond milk
• 2 tbls coconut, desiccated
• 2 mangoes
• 1 punnet strawberry’s
• 2 tsp agar agar
• Fruit juice like pear, apple, strawberry (sugar free)

Method

Cook sago in almond milk until soft, about 20-minutes. Then stir through the coconut and pour into little plastic cups about half way up.
Put fruit into a processor and blend with enough fruit juice to make a runny liquid. Put the liquid into a shallow pan with the agar agar and
simmer until it thickens, about 10 minutes. Let cool slightly then top sago with fruit puree. Put in the fridge and let cool and set.
