Ingredients:
- Kataifi Pasty
- Melted butter
- Orange Blossom water
- Sugar
- Honey
- Candied Orange peel
- Thick plain Greek yogurt
- Icing Sugar
- Pistachio Nuts
Method:
- Pre-heat the oven to 190oC
- Brush a baking tray with melted butter
- Pull hands full of the Kataifi pastry loose from the whole bundle, and make circular nests on the baking tray
- Brush the rounds with a generous amount of melted butter, making sure that the butter soaks all the strings of the pastry
- With your finger, press down in the middle of the pastry round, creating a little well in the middle – this will be helpful when adding the fillings
- Place the nests into the pre-heated oven and bake them for about 10 minutes or until they start browning and become crispy
- While the pastry is baking, dissolve 4 cups of sugar in 2 cups of boiling water in a heavy bottomed saucepan
- Once the sugar has dissolved, add some orange blossom water (amount to taste) to the sugar syrup and allow this mixture to reduce for about 15 – 20 minutes
- During this reduction process, you can add some orange blossom honey to the syrup as well – this will increase the sweetness of the syrup and aid in the thickening of the syrup
- Set this aside and allow it to cool down completely
- Once the pastry is cooked, let it cool
- To serve, drench the nests in the cooled syrup, add a dollop of thick Greek yogurt and top with a slice of candied orange and crushed pistachio nuts
- Finally, dust with icing sugar and serve
