Grilled Pineapple Skewers

Grilled Pineapple Skewers drizzled with Mint sugar and served with homemade Custard

Ingredients:

Method:

  1. Mint Sugar
    1. In a liquidizer, combine the mint leaves and the sugar
    2. Blend this until the sugar and the mint starts combining, and the sugar turns bright green
    3. Set aside to be used later on
  2. Home Made Custard
    1. In a heavy bottomed pot, heat up the milk and the cream until it starts simmering
    2. In a separate bowl, mix the egg yolks, sugar and corn flour until it starts turning a light yellow colour
    3. Mix this into the cream and milk mixture, making sure that it does not develop any lumps
    4. Add the vanilla essence to this mixture and stir it through
    5. Add the egg mixture to the hot milk and whisk continuously
    6. Keep on whisking for a further 5 minutes until the custard comes to a boil
    7. Set aside to cool
  3. Grilled Pineapples:
    1. Cut off the crown of the pineapple
    2. Leaving the skin on, cut the pineapple into quarters (or large wedges)
    3. Soak the wooden skewers in water to prevent them from burning on the braai
    4. Skewer the pineapple wedges through the woody part of the fruit
    5. Drizzle the pineapple skewers with some castor sugar and place on the grill to braai
    6. This cooking process allows all the sugar in the fruit to caramelize and softens the flesh of the fruit slightly
    7. Once all the sugar is caramelized and the pineapple has developed griddle lines, remove from the fire
    8. Serve the grilled pineapple skewers by drizzling it with some mint sugar alongside the home made custard

Apple and Lemon Grass Ice Lollies

Ingredients:

Method:

  1. Peel and chop the apples and add to a blender
  2. Peel a thumb of ginger and add this to the blender
  3. Add some apple juice to add moisture before blending the mixture
  4. Blend this mixture until it develops a smooth and thick consistency
  5. Add some more apple juice to loosen the mixture slightly
  6. Pour the pulp into an ice lolly mould
  7. Replace the plastic ice lolly stick with a piece of lemon grass to add additional flavour
