Grilled Pineapple Skewers drizzled with Mint sugar and served with homemade Custard
Ingredients:
- 1 Pineapple
- Castor sugar
- I Bunch Mint leaves
- 2 tbsp Sugar
- Wooden skewers
- For the Custard:
- 1 cup of cream
- 1 cup of milk
- 4 egg yolks
- ½ cup of castor sugar
- 1 tbsp. Corn flour
- 1 teaspoon Vanilla Essence
Method:
- Mint Sugar
- In a liquidizer, combine the mint leaves and the sugar
- Blend this until the sugar and the mint starts combining, and the sugar turns bright green
- Set aside to be used later on
- Home Made Custard
- In a heavy bottomed pot, heat up the milk and the cream until it starts simmering
- In a separate bowl, mix the egg yolks, sugar and corn flour until it starts turning a light yellow colour
- Mix this into the cream and milk mixture, making sure that it does not develop any lumps
- Add the vanilla essence to this mixture and stir it through
- Add the egg mixture to the hot milk and whisk continuously
- Keep on whisking for a further 5 minutes until the custard comes to a boil
- Set aside to cool
- Grilled Pineapples:
- Cut off the crown of the pineapple
- Leaving the skin on, cut the pineapple into quarters (or large wedges)
- Soak the wooden skewers in water to prevent them from burning on the braai
- Skewer the pineapple wedges through the woody part of the fruit
- Drizzle the pineapple skewers with some castor sugar and place on the grill to braai
- This cooking process allows all the sugar in the fruit to caramelize and softens the flesh of the fruit slightly
- Once all the sugar is caramelized and the pineapple has developed griddle lines, remove from the fire
- Serve the grilled pineapple skewers by drizzling it with some mint sugar alongside the home made custard
Fun Extra addition to the Braai:
Apple and Lemon Grass Ice Lollies
Ingredients:
- Apples (red or green)
- Apple Juice
- Lemon Grass
- Mint
Method:
- Peel and chop the apples and add to a blender
- Peel a thumb of ginger and add this to the blender
- Add some apple juice to add moisture before blending the mixture
- Blend this mixture until it develops a smooth and thick consistency
- Add some more apple juice to loosen the mixture slightly
- Pour the pulp into an ice lolly mould
- Replace the plastic ice lolly stick with a piece of lemon grass to add additional flavour
