Greek Salad Toasties with Haloumi Cheese

Ingredients:

  • Haloumi Cheese
  • 4 Chiabatta rolls
  • 1 Red Onion
  • Large, ripe tomatoes
  • Salad leaves
  • Fresh Flat Leaf Parsley
  • Salt and pepper
  • Olive Oil
  • Calamata Olives

Method:

  1. Cut the chiabatta rolls in half
  2. Brush the inside of the chiabatta with some olive oil
  3. Put the slices of chiabatta onto the hot grill and allow it to braai until it starts developing the beautiful brown colour and grilling lines – press down onto the slices of bread from time to time to make sure that the distinct grilling lines develops on the surface of the bread
  4. Slice the haloumi cheese into slices and season with some oreganum and olive oil
  5. Place the on the hot fire and allow the cheese to braai along with the slices of chiabatta
  6. Turn the haloumi once during cooking
  7. Slice a lemon into half and place it flesh down onto the grill, allowing the flesh to braai and the juices and the sugars to caramelize
  8. Slice the tomatoes and red onions into thin slices
  9. Start assembling the toasties by putting some crisp lettuce onto the toasted chiabatta slices
  10. Add the tomato and red onion slices onto the lettuce
  11. Add the grilled haloumi cheese on top of the tomato and onion and top of with some whole black calamata Olives
  12. Season with some oreganum, pepper and Parsley
  13. Drizzle some olive oil and lemon juice over the assembled Greek salad toasties
  14. Place the toasties onto a serving platter and garnish with the parsley and grilled lemons
