Ginger Pork with Noodles
Serves 4
This is, because of the Chinese hoisin sauce, slightly sweet. It is also good with out the basil. This is a great quick meal in a bowl.
Ingredients
- 200g (7oz) thick rice noodles
- 1 tbsp peanut/sunflower oil
- 2 tbsp grated ginger
- 500g (1lb) minced pork
- 50ml (2fl.oz)hoisin sauce
- 115ml (4fl.oz) chicken stock
- 2 tbsp chopped coriander
- 1 tbsp shredded basil
Method
- Put the rice noodles in boiling water and cook for about 8 minutes, or until tender.
- Drain while the noodles are cooking heat the oil in a frying pan or wok, add the ginger and pork and cook for about 5 mins.
- Add hoisin sauce and chicken stock and cook for 2 more minutes.
- Toss in the coriander, basil and noodles, season to taste and serve straightaway.
