Gary’s Ginger Slice



  • Base
    • 225g butter
    • 170g sugar
    • 75g golden syrup
    • 125g coconut
    • 230g rolled oats
    • 1800g flour
    • 3 tsp baking powder
    • 3 tsp ground ginger.
  • Filling
    • 150g butter
    • 75g golden syrup
    • 250g Icing sugar
    • 35g candied ginger



  1. For the base, melt the butter, sugar and golden syrup together. .
  2. Fold in the dry ingredients and spoon into a square cake tin.
  3. Bake at 180°C for 15 minutes. Cool.
  4. For the filling, melt the butter and golden syrup together, sift the icing sugar and mix with the ginger.
  5. Whisk into the melted butter.
  6. Spread over the base with a hot palette knife – slice.
  7. Place into a preheated oven at 160°C for about 40 minutes.
