Fresh Fruitcake Stack with roasted Almonds and Fresh Honey

Method

For the Fruit Stack:

  1. Peel and slice the assorted fruits into long thin slices
  2. Using a large glass canister, start layering the slices of fruit – using one fruit at a time to complete a layer
  3. Also make sure to use contrasting colours on top of each other, like watermelon on top of sweet melon and then papaya on top of watermelon etc
  4. Push the layers of fruit down as gently but firmly as possible, to ensure that the layers are compact in the canister, and allowing for as much fruit as possible to be added during the process
  5. Once the canister is filled, top the layers off with a layer of fresh mint
  6. Garnish the “fruit Cake” with some roasted Almonds and drizzle some fresh Honey over the “fruit cake” allowing the honey to seep into the layers of fresh fruit
  7. Top off the garnish with some fresh berries and refrigerate the “fruit cake” for about 10 minutes to allow the fruit to set in the canister
  8. Finish the dish off by tying a big ribbon around the canister and serve cold
