Falafel Burgers

Makes 4

Ingredients

  • 2 x 400g cans chickpeas, drained, rinsed and dried
  • 4 cloves of garlic
  • 10 ml (2 tsp) ground coriander
  • 10 ml (2 tsp) ground cumin
  • 1 onion, finely chopped or 2 spring onions
  • 1 carrot, grated
  • 30 ml (2 Tbsp) cake flour
  • 15 ml (1 Tbsp) finely chopped flat leaf parsley
  • salt and freshly ground black pepper
  • olive oil

Method

  1. In a food processor, blend chickpeas until smooth. Add garlic, coriander, cumin, carrot, onion and parsley and blend to a smooth paste. Drizzle in enough olive oil to bring the mixture together.
  2. With wet hands, shape the paste into patties and sprinkle with flour. Allow to set in the fridge for at least an hour.
  3. Grill the burgers on a medium braai for 5 – 7 minutes on each side until golden and slightly crispy on the outside, but still soft in the middle. They can also be shallow fried on the stove.
  4. Serve burgers on fresh rolls or pita bread with a fresh mint yoghurt sauce.
