Cheat’s Pavlova


Here’s How

  1. Whisk the mascarpone with fresh cream, sugar and vanilla until thick and fluffy.
  2. Gently place the pavlova on a serving plate.
  3. Spoon the mascarpone into the pavlova shell and spread the cream evenly.
  4. Top with strawberries and blackberries.
  5. Heat the fresh cream and add the chopped chocolate.
  6. Whisk until the chocolate has dissolved and forms a silky sauce.
  7. Leave to cool and then drizzle over the berries.
  8. Garnish with sprigs of mint.

  1. Assemble the pavlova just before serving to prevent it from becoming soggy.
  2. Mangoes, gooseberries and blueberries can be used instead of strawberries.
