Guacamole

Yield: 2 cups (500 ml)
Ingredients
- The pulp from 3 ripe avocados
- 3 tbsp (45 ml) lime juice
- 1 Italian tomato, seeds removed and diced
- 1 green onion, thinly sliced
- ¼ cup (60 ml) fresh coriander, finely chopped
- Salt and Pepper
Method
- Mash the avocados with the lime juice using a fork or a mortar pestle.
- Ina bowl, mix the avocado purée, tomatoes, onion and coriander. Sprinkle salt and pepper. Serve with white corn chips.
