Ingredients
- 1 (3 lb/1,5kg) shoulder pork roast without bone
- 2 Tbsp (30 ml) butter
- 4 cups (1 litre) milk
- 4 garlic cloves
- 2 onions, peeled
- 1 leek, white section only
- 1/4 tsp (1 ml) ground nutmeg
- Salt and pepper
Method
- Place rack in centre of oven. Pre-heat oven to 350 °F(180 °C).
- In a large oven casserole, brown the pork roast in butter. Add milk. Bring to boil. Add vegetables and nutmeg. Season with salt and pepper. Cover and cook in oven for 2 ½ hours
- Uncover and continue cooking approximately 1 ½ hours or until sauce is reduced by half. Turn pork over every 20 minutes.
- Remove pork roast from casserole and set aside. Pour liquid through sieve. Whisk sauce and season to taste.
