Baked Potatoes

A baked potato is the perfect food to eat while watching a good movie. Whether your favourite topping is baked beans or Manchego cheese with Serrano ham, there is always something in the fridge for everyone. Baked potatoes are good and wholesome because most of the goodness in a potato is stored just under the skin, which is retained when

you bake it – none of it is lost in cooking water.

Ingredients 

Method 

  1. Preheat the oven to 230°C (450°F), Gas mark 8. Pierce a few holes in the potato with a skewer or a fork and put on a tray or rack into the preheated oven. Cook
  2. for 40–55 minutes, until the potato feels soft under the crispy skin. You can cook the potatoes with a metal skewer stuck through them to speed up the cooking process. When the potato is baked, remove it from the oven and cut a cross in it to open it out slightly.
  3. Serve with a topping of your choice – each of those given here (there are two more overleaf) makes enough for two potatoes.
