Gorgonzola cheese and caramelized pear puff pastry tarts


  • 1 roll puff pastry
  • 1 egg
  • 200g gorgonzola cheese
  • 2 pears(thinly sliced with stalks and skin on)
  • 1 cup good quality red wine
  • 1 cup white sugar
  • 6-8 whole cloves
  • 1 cinnamon stick
  • fresh sprouts
  • edible flowers


  1. Preheat oven to 220’C
  2. Working with cold pastry, cut shapes(hearts/rounds) using a cookie cutter out of the pastry. Place them on a floured baking sheet and brush with egg.
  3. Top with about a tablespoon of gorgonzola or brie cheese.
  4. Bake in the hot oven for about 20 minutes or until the pastry has risen and is golden brown.
  5. For the pears, place the red wine, sugar, cloves and cinnamon into a heavy bottomed pot and stir, bringing to a gentle boil. Add the sliced pears and simmer until the pears are nicely poached and the sauce has thickened.
  6. Place 2 slices at an angle on top of the puff pastry and garnish with some sprouts and edible flowers on the side. Drizzle some of the sauce around the plate and serve.
