Ingredients
- 2 small sweet potatoes
- Coarse salt and freshly cracked black pepper, to taste
- Pinch chili powder
- 2 tsp. chopped fresh ginger
- 1 tbsp. olive oil
Method
- Preheat oven to 400 degrees F.
- Cut sweet potatoes in wedges.
- In a medium bowl, toss the wedges with salt and pepper, chili powder, ginger and olive oil.
- Transfer to baking sheet or roasting pan. Don’t let wedges overlap. Bake until golden brown and tender in the centre, turning occasionally, about 15 to 20 minutes.
