Ingredients
- 2 tbsp. olive oil
- 1 tbsp. butter
- 1 yellow pepper, diced
- 1 to 2 garlic cloves, roughly chopped
- Half 5-ounce package baby spinach
- Coarse salt and freshly cracked pepper, to taste
Method
- Heat large fry pan on high. Add olive oil and butter. When the butter begins to sizzle add the peppers. Sauté for 1 to 2 minutes until tender crisp.
- Add garlic and cook until soft, about 1 minute. Add the spinach. Stir for 30 seconds. Take off heat – spinach should still be green and just wilted. Season with salt and pepper, to taste.
