Sweet Potatoes with Rhubarb
- sweet potatoes
- rhubarb stalks
- salt and pepper
- Slice the sweet potatoes into rounds and cut rhubarb into chunks.
- Place in an ovenproof dish and season with salt and pepper.
- Add just enough water to cover the base of the dish and cover with foil.
- Bake at 180 °C until potatoes are tender.
