Banana Chocolate Chip Muffins

Ingredients
- 1 cup white All Purpose flour
- 1/ cup whole wheat flour
- ½ cup rolled oats
- 2 tsp. ground cinnamon
- 2 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1 ripe banana, mashed
- ¼ cup chopped walnuts
- ½ cup light brown sugar
- 2 Tbsp. vegetable oil
- 2 large organic eggs
- 1 ¼ cup reduced-fat buttermilk
- 1 tsp. pure vanilla extract
- 2 Tbsp. chocolate chips
Method:
Pre-heat oven to 400*
- Line 12 muffin tin with paper liners. In a stand mixer combine first 8 ingredients, blend on low speed for 2 minutes. Add walnuts, sugar, oil, eggs and buttermilk, blend for 2 minutes on medium speed then add vanilla extract.
- Using an ice cream scoop, portion batter evenly into the tin, top each muffin with 3-4 chocolate chips and bake for 15 minutes.
Tip: Muffins will stay fresher longer if stored in plastic bag or air tight container.
