Steamed green soya beans (edamame) are one of my favourite Japanese finger foods. Generally the pods are sprinkled with salt so when you pull them through your teeth to release the tender beans inside you get a pleasant saltiness – which inspires another cold beer or sake. I’ve been thrilled at how easy they are to grow in my garden, but you’ll also find them frozen at Asian supermarkets.

Cook time: 6-8 mins
Serves: 6 as a starter
- 500g edamame in the pod
- 1 tsp flaky salt
- Place edamame pods in a pot with a little water and steam for 6-8 minutes.
- Transfer to a serving bowl, season with salt and serve hot, with a separate bowl for the empty pods.
