BYOC: Use your favorite herb here and tailor this dressing to the meal or your family’s favorite flavors… fresh thyme oregano, basil, chervil, parsley, anything goes! Try serving this sweet and tangy dressing tossed with fresh baby spinach, a baby mesclun mix or even butter lettuce and blue cheese.
Ingredients
- 1 cup garlic infused olive oil
- 1/2 cup white balsamic vinegar (reduced by 1/3)
- 3 sliced garlic cloves
- Salt and pepper to taste
- 2 large peeled chopped tomatoes, divided
- 3 tablespoons fresh tarragon, divided
Method
- In a non-reactive bowl, whisk together oil and vinegar until completely combined. Add garlic, and half of the tomatoes and herbs. Season with salt and pepper and stir to coat. Cover and chill 6 hours. Strain mixture through fine sieve and discard solids. Stir in the remaining tomatoes and herbs.
- Serve over slices of fresh tomato.
