Celery, Mushroom and Parmesan Salad
Yield: 4 servings.
Ingredients
- 1 cup celery, shaved with a vegetable peeler
- 1 cup white mushrooms, sliced thinly
- 1 cup shaved parmesan cheese
- 3 tablespoon freshly squeezed lemon juice
- 6 tablespoons extra-virgin olive oil
- Kosher salt and freshly cracked black pepper
Method
- In a large bowl toss celery, mushrooms and Parmesan cheese until well combined.
- Pour the lemon juice and oil over salad and toss until well combined.
- Season with salt and pepper to taste.
