
Easy Coleslaw Salad
Easy Coleslaw Salad with a Creamy Horseradish Dressing
Serves 4
Ingredients
- For the salad
- ¼ red cabbage, very thinly sliced
- ¼ savoy cabbage, thinly sliced
- 2 celery stalks, diced
- 2 red apples, sliced into julienne
- 2 tbsp sultanas, soaked in 2 tbsp apple juice
- 2 tbsp chives, chopped
- For the dressing
- 1 tbsp cream
- 4 tbsp mayonnaise
- 4 tbsp natural yogurt
- 1 tbsp horseradish sauce
- ½ lemon, zest and juice
- Salt and fresh ground black pepper
- 1 tbsp chopped chives for garnishing
Method
- To make the dressing, stir the cream, mayonnaise, natural yogurt, horseradish sauce, lemon zest and juice in a bowl. Season with salt and pepper.
- Toss the shredded cabbage, celery, apple, sultanas, and chives with the dressing. Check the seasoning, adding salt and pepper to taste and serve.
