Easy Coleslaw Salad

Easy Coleslaw Salad with a Creamy Horseradish Dressing

Serves 4

Ingredients

  • For the salad
    • ¼ red cabbage, very thinly sliced
    • ¼ savoy cabbage, thinly sliced
    • 2 celery stalks, diced
    • 2 red apples, sliced into julienne
    • 2 tbsp sultanas, soaked in 2 tbsp apple juice
    • 2 tbsp chives, chopped
  • For the dressing
    • 1 tbsp cream
    • 4 tbsp mayonnaise
    • 4 tbsp natural yogurt
    • 1 tbsp horseradish sauce
    • ½ lemon, zest and juice
    • Salt and fresh ground black pepper
    • 1 tbsp chopped chives for garnishing

 Method

  1. To make the dressing, stir the cream, mayonnaise, natural yogurt, horseradish sauce, lemon zest and juice in a bowl.  Season with salt and pepper.
  2. Toss the shredded cabbage, celery, apple, sultanas, and chives with the dressing. Check the seasoning, adding salt and pepper to taste and serve.
