Dutch Cheese Croquettes

Makes 12


  • 225g (8ozs) roux
  • 450ml (16fl ozs) milk
  • 2 egg yolks
  • 225g (8ozs) grated cheddar cheese
  • 1 heaped tbsp chopped chives
  • salt and pepper
  • seasoned flour
  • 1 beaten egg
  • dried breadcrumbs (toasted)


  1. Make a thick white sauce with the milk and the roux. 
  2. Stir in the egg yolks, cheese and chives. 
  3. Cool. 
  4. Shape into croquettes, dip in the seasoned flour, brush with beaten egg and roll in toasted breadcrumbs. 
  5. Chill until very solid. 
  6. These are best deep-fried but can be fried in shallow oil.
