Ingredients
- 1 cup (250 ml) leeks, chopped
- 1 garlic clove, chopped
- 3 tbsp (45 ml) butter
- 4 cups (1 litre) cheddar-cauliflower cut in clumps
- 1 cup (250 ml) potatoes, peeled and cut in pieces
- 5 cups (1.25 litre) chicken broth
- 2 Cortland apples, peeled, piped and sliced
- ΒΌ cup (60 ml) 35% cream
- Chives, minced
- Salt and pepper
Method
- In a saucepan, cook leeks and garlic in butter until tender. Season with salt and pepper. Add the cheddar-cauliflower, potatoes and broth. Bring to a boil and let simmer uncovered for 10 minutes. Add the apples and continue cooking for 10 minutes.
- Use a mixer to reduce to a puree. Add the cream. Adjust the seasoning. Serve with cheddar croutons. (see the recipe that follows).
