Chicken and Mushroom Casserole



  • Olive Oil
  • 2 garlic cloves, crushed
  • 1kg chicken pieces (preferably thighs)
  • 1 sachet minestrone Packet Soup  
  • 25 ml Worcester sauce  
  • 2 onions, chopped
  • Mushrooms chopped
  • Bacon
  • chopped peppers – green, yellow & red
  • 3 carrots, finely diced
  • Freshly Ground Salt and Pepper to taste
  • All in one spice – Rajah
  • Water   
  • Salt
  • Barbeque spice – no name brand
  • 125ml chopped parsley
  • Clover Sour cream 


  1. Heat oil in a large pan
  2. Sauté onions, bacon,  mushrooms, peppers, garlic, carrots and place in a large casserole dish
  3. Using the same frying pan, brown the chicken lightly on both sides and season lightly
  4. Add remaining ingredients to the pan except the sour cream and mix well
  5. Pour over the chicken, cover and bake at 160°C for 1 hour 30 minutes
  6. Just before serving add sour cream and stir through
  7. Sprinkle with chopped chives and serve with a side portion of rice
