BBQ’d Veggies
Serves 4 – 6
Time: 15 minutes
Ingredients
- 1 desiree potato, sliced
- 1 sweet potato, sliced
- 1 fennel, quartered
- 1 red capsicum, deseeded, quartered
- 1 green capsicum, deseeded, quartered
- 1 cup button mushrooms, whole
- olive oil
- paste
- 6 cloves garlic, skin removed, roughly chopped
- 4 anchovies
- ½ anchovy oil
- salt
Method
- In a mortar and pestle, pound garlic, anchovies, anchovy oil and a pinch of salt until will combined. Set aside.
- Place all vegetable in a large mixing bowl and drizzle with a good amount of olive oil. Add paste and with your hands mix until evenly distributed.
- Transfer for vegies to grill and cook for ten minutes until vegetables are soft and nicely coloured.
- Sprinkle with freshly chopped parsley and serve.
