BBQ’d Veggies

Serves 4 – 6

Time: 15 minutes

 Ingredients

  • 1 desiree potato, sliced
  • 1 sweet potato, sliced
  • 1 fennel, quartered
  • 1 red capsicum, deseeded, quartered
  • 1 green capsicum, deseeded, quartered
  • 1 cup button mushrooms, whole
  • olive oil
  • paste
    • 6 cloves garlic, skin removed, roughly chopped
    • 4 anchovies
    • ½ anchovy oil
    • salt

Method

  1. In a mortar and pestle, pound garlic, anchovies, anchovy oil and a pinch of salt until will combined. Set aside.
  2. Place all vegetable in a large mixing bowl and drizzle with a good amount of olive oil. Add paste and with your hands mix until evenly distributed.
  3. Transfer for vegies to grill and cook for ten minutes until vegetables are soft and nicely coloured.
  4. Sprinkle with freshly chopped parsley and serve.
