Ingredients
- 1 punnet Rosa tomatoes
- 12-15 small mozzarella balls
- 1 small packet basil leaves
- baby lettuce leaves
- balsamic reduction
- pesto
- salt, cracked black pepper
- wooden/decorative skewers
Method
- Pierce the mozzarella ball through the skewer, followed by a basil leaf, then a tomato.
- For the next skewer, start with the Rosa tomato followed by a basil leaf and then a mozzarella ball.
- Put a mound of fresh lettuce on one corner of the plate and place the skewers neatly across the lettuce, to resemble a Carprese salad.
- Season with salt and pepper and make shapes with the balsamic reduction and the basil pesto on the plate. Serve immediately.
