Avocado chocolate pudding

Ingredients:

  • 4 large, ripe avocados
  • 2/3 cup (160 ml) cocoa powder
  • 2/3 cup (160 ml) honey
  • ½ cup (120 ml) milk
  • ½ teaspoon (2.5 ml) vanilla extract
  • 1/8 teaspoon (0.5 ml) salt
  • ½ cup toasted sweetened shredded coconut, to garnish

Method:

  1. Remove pit from avocados and scoop flesh into a blender. Add cocoa powder, honey, milk, vanilla, and salt to the blender.
  2. Blitz until thick and creamy, adjusting thickness with more milk if needed. Pour into 4 small serving dishes.
  3. Divide toasted coconut among 4 servings.
