3 Flavours for Meat and Fish

 

Teriyaki Marinade

Ingredients:

  • 4 tbsp soy sauce
  • 2 tbsp vinegar
  • 2 garlic cloves, finely chopped
  • 1 tbsp fish sauce
  • 1 tbsp water
  • 1 tbsp sunflower oil

 Method:

  1.  Blend and use as a marinade for pork or chicken

Sumac Rub

Ingredients:

  • 1 lemon, zest only
  • 1 orange, zest only
  • 2 tbsp parsley, chopped
  • 2 garlic cloves, chopped
  • 2 tsp sumac

 Method:

  1. Blend in a pestle and mortar and use as a rub for fish and chicken

Watercress Marinade

Ingredients:

  • 30g watercress
  • 200g natural yogurt
  • 1 lemon, zest only
  • Mint, optional
  • Salt and freshly ground black pepper

 Method:

  1. Place all the ingredients into a food processor and blend until smooth. 
  2. Season with salt and freshly ground pepper.
