Roasted Red Pepper Mayo

Ingredients

  • 1/2 cup diced roasted red pepper (from about 3/4 cup packed jarred roasted red pepper)
  • 3/4 cup prepared mayonnaise
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • Juice of 1/2 lemon

Directions

  1. Combine the red pepper, mayonnaise, garlic, salt, cayenne pepper, and lemon juice in the bowl of a food processor, and process for 30 seconds. Scrape down the sides of the bowl with a rubber spatula and process for 30 seconds longer. Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
