Ingredients
- ¾ cup (180 ml) pumpkin seeds, lightly toasted
- 1 garlic clove, sprout removed
- ½ cup (125 ml) fresh parmesan, grated
- 1 cup (250 ml) basil leaves, rinsed and sponged
- 1 ¾ cups (430 ml) rich yogurt (Mediterranean style)
- ¼ tsp. (1 ml) honey
- ¼ tsp. (1 ml) Cayenne pepper
- Salt and pepper
Method
- Use a food processor to chop the pumpkin seeds, garlic, parmesan and basil. Pour into a bowl. Add the yogurt, honey and Cayenne pepper. Season with salt and pepper.
- Serve in a small, hollowed-out pumpkin.
- This dip is delicious with raw vegetables, grissini (Italian bread sticks) or broiled chicken brochettes.
