Pineapples and Grapes on the Barbecue

Serves 4 – 6

Ingredients

  • 1 pineapple, sliced into wedges with the leave intact
  • ½ tsp mild curry
  • 5 tbsp caster sugar
  • 5 – 6 small bunches of red grapes
  • 3 tbsp sherry
  • 2 tsp sugar
  • A few sprigs of mint

Method

  1. Preheat the bbq.
  2. Combine the curry and sugar in a bowl and sprinkle of the pineapple. 
  3. Drizzle the grape with the sherry.
  4. Place the fruit on the BBQ. Caramelise / grill for about 3 – 4 minutes. Allow to cool slightly.
  5. Serve with coconut or vanilla ice cream.
