Mango Salsa with Barramundi and Noodles
Ingredients
Fish
- 2 pieces of fish
- 1/4 cup white spelt flour
- 1 tbls olive oil
- Salt
Salsa
- 2 mangos, flesh diced
- 2 tbls lime juice
- Handful of coriander, roughly chopped
- 1 medium chilli, finely diced
- 1/2 red onion, diced
- 1 tbls olive oil
- 1 tsp Sea salt
- 1 tsp white pepper
Noodles
- 1/2 pkt mugwort soba noodles
- Good pinch of arame
- Zest of 1/2 an orange
- Juice of 1/2 an orange
- 1 tsp white pepper
Coriander leaves for garnish
Method
Salsa
- Gently combine all of the ingredients.
Noodles
- Cook noodles in plenty of water until al dente.
- Pour into a colander and let cool.
- Hydrate the arame in a bowl of water.
- In a bowl, stir thru remainder of noodle ingredients and set aside.
Fish
- Coat fish in the flour and pan-fry in the oil until brown and then flip.
- Season. Cook on the other side until brown.About 1 – 2 minutes on either side.
To assemble
- Place half of the noodles on a plate then top with pan fried barramundi. Top with salsa and garnish with coriander leaves.
