Pull hands full of the Kataifi pastry loose from the whole bundle, and make circular nests on the baking tray
Brush the rounds with a generous amount of melted butter, making sure that the butter soaks all the strings of the pastry
With your finger, press down in the middle of the pastry round, creating a little well in the middle – this will be helpful when adding the fillings
Place the nests into the pre-heated oven and bake them for about 10 minutes or until they start browning and become crispy
While the pastry is baking, dissolve 4 cups of sugar in 2 cups of boiling water in a heavy bottomed saucepan
Once the sugar has dissolved, add some orange blossom water (amount to taste) to the sugar syrup and allow this mixture to reduce for about 15 – 20 minutes
During this reduction process, you can add some orange blossom honey to the syrup as well – this will increase the sweetness of the syrup and aid in the thickening of the syrup
Set this aside and allow it to cool down completely
Once the pastry is cooked, let it cool
To serve, drench the nests in the cooled syrup, add a dollop of thick Greek yogurt and top with a slice of candied orange and crushed pistachio nuts
