Gary’s Ginger Slice
Ingredients
- Base
- 225g butter
- 170g sugar
- 75g golden syrup
- 125g coconut
- 230g rolled oats
- 1800g flour
- 3 tsp baking powder
- 3 tsp ground ginger.
- Filling
- 150g butter
- 75g golden syrup
- 250g Icing sugar
- 35g candied ginger
Method
- For the base, melt the butter, sugar and golden syrup together. .
- Fold in the dry ingredients and spoon into a square cake tin.
- Bake at 180°C for 15 minutes. Cool.
- For the filling, melt the butter and golden syrup together, sift the icing sugar and mix with the ginger.
- Whisk into the melted butter.
- Spread over the base with a hot palette knife – slice.
- Place into a preheated oven at 160°C for about 40 minutes.
